The market gardener I meet at dawn
Ben and his team grow around ten varieties of heirloom tomatoes and a wide range of seasonal fruit and vegetables, all without the use of pesticides, on over ten hectares in L’Isle-sur-la-Sorgue.
Authentic produce, grown with care and harvested at just the right time. These are the vegetables you’ll find in my tian, in my gazpacho, and on my table.
When I say that my cooking begins at the market, it’s often here that it really does begin.

Quatre cuvées d'exception, reconnues par des chefs étoilés. C'est cette huile qui est au cœur de ma cuisine, de la première entrée au dernier plat.
